Three Good Recipes

With my bit of spare time I have now, I’ve been trying out some new recipes. I know! I’m cooking! Allen is normally the one who cooks out of the two of us, but I made a New Year’s resolution to try and cook a little more. Anyway, I’ve made a few hits the past couple days, so I thought I’d share the recipes.
The first recipe is Santa Fe veggie quesadillas (pictured above). I did a few things differently from the All Recipes instructions:
- I pre-grilled the veggies.
- I added another baked flour tortilla on the top, making them closed face quesadillas.
- I served them with light sour cream and salsa for dipping.
Then I made this spicy oil and vinegar bread dip just for snacking with some light German rye bread we have. It was really nice, but when I make it again, I will use less balsamic vinegar than the recipe calls for as the scent was a bit strong.
Lastly, tonight I made a really great vegetarian Greek dinner including oven roasted Greek potatoes and rice covered in tzatziki sauce, sweet carrots and a spinach salad with red onions, mandarin oranges, almonds, feta and toasted sesame dressing.
It all turned out really nicely, even though it was me who made it.
